These two glove types are not competing products — they do different jobs, and most kitchens that get this right carry both. 5 mil black nitrile is the fitted, puncture-resistant glove for anything involving prep, handling raw protein, cleaning, or extended wear. It stays on, it does not tear, and the black colour makes it obvious if one ends up somewhere it shouldn't.
Polyethylene deli gloves are the loose, one-size film glove for short tasks — grabbing bread, assembling a sandwich, plating, serving. They cost about a fraction of the per-glove cost of nitrile and they are designed to be pulled on and thrown away in seconds.
Using nitrile for everything is the most common way kitchens overspend on gloves. Using poly for everything is a food-safety problem the moment raw protein is involved.

Why 5 mil, and why black
5 mil is the thickness that holds up to a full shift. Thinner nitrile (3 mil) is cheaper but tears at the fingertips during prep, and a torn glove mid-task costs you more in replacement gloves than the upgrade did.
Black is the food service standard for a practical reason: a fragment of a black glove is immediately visible against food, which is exactly what you want if one ever tears into a dish. Blue is the alternative used in some jurisdictions for the same reason.
